Quick Apple Sauce

During my baking therapy weekend I looked at some apples that I just knew I was not going to eat and thought, what else can I do? I could have tried my hand at a apple bread or apple tart but I wanted something super fast and easy… apple sauce! My daughter loooves her apple sauce, she’s obsessed. I only usually buy the no-sugar added stuff- because frankly it’s not necessary, apples are sweet enough without it. I have made and canned apple sauce in the past and it required a good deal of time as well as effort and many many more apples than I had. I only had 4 apples but I was hoping that would be enough for two individual servings since it was just me and my daughter having some and I didn’t want to have to can it or anything that required real effort. It made just enough for the both of us to enjoy. It was one of those spur of the moment situations when you don’t necessarily have all the ingredients you would use in an ideal situation so you kind of wing it. That’s what I should call this “wing it apple sauce’ :).

I had 4 apples on hand, two fuji apples, one gala and a granny smith. Peel and core the apples and slice apples. Place all apple slices into a medium sauce pot, add 1/2 cup of water, 1/2 teaspoon of cinnamon and a dash of nutmeg. 1 tablespoon of butter and simmer for 30 minutes covered and mash (I used a potato masher)- it was literally that easy, no fuss no muss!

The apple sauce was sweet without being overly so, it had a lot of great flavor from the multiple kinds of apples I used and the spices were spot on. I would totally recommend this for any time you just want a snack, couldn’t be easier!

Whole Wheat Banana Muffins

Sometimes in life a girl needs a little therapy. Sometimes it’s in the form of chatting over coffee with your friends, sometimes it’s retail therapy in your favorite store and sometimes therapy can be found in your own oven- I call this baking therapy. I personally think that cooking and baking is good for your soul, so when I’m feeling down and need a pick me up, to the kitchen I go. Eating is also good for the soul as well, in my opinion, so let’s eat well and healthy when we can.

I developed this Whole Wheat Banana Muffin recipe as an adaptation form another recipe that I had tried: Whole Wheat Brown Butter Banana Muffins.
Madeline loves these muffins and I love giving them to her since they are healthy and have little refined sugar in them. She definitely had a hard time waiting for them to come out of the oven!

Whole Wheat Banana Muffins
Yeilds: 12 muffins

Ingredients:
1 1/2 cups whole wheat flour
1/2 teaspoon baking soda
1/4 teaspoon cinnamon
1/24 teaspoon nutmeg
2 eggs
2 tablespoons honey
1/4 cup natural apple sauce
1/2 cup packed brown sugar
1 teaspoon vanilla or almond extract
1/4 cup melted butter
2 mashed ripe bananas

Preheat oven to 325 degrees

Mix all dry ingredients including sugar, add in honey, eggs, vanilla, apple sauce, melted butter, and mashed bananas and mix till blended. Scoop muffin mixture into lined or sprayed muffin pan and bake for 15 minutes or until a toothpick inserted in the center of a muffin comes out clean. Serve immediately or store in an air tight container.

Happy Hour

Finally got to have happy hour today with my coworkers. We decided on Dish for drinks and got some great deals on wine and apps.

I got an order of crispy tender calamari with a very spicy and zesty cocktail dip with a grilled cheese with caramelized onions, sautéed spinach and tomato.
